Alfredo Turkey Meatballs

I was on the search today for a Alfredo Turkey Meatball, sounds a bit odd, but someone suggested it to me awhile back through another site and I thought hmmm….well I’m not the only  nut job because when I did a search for a recipe I found Ashley over at Food N’ Fitness Diaries! I’m so glad I did because I love her site! I never thought about serving it over mashed potatoes (even weirder huh) but I started thinking about what I was going to serve with it as I was making them. Then I remembered I had a head of cauliflower I had to use tonight so I came up with Smashed Cauliflower which is almost identical to my Mashed Cauliflower recipe but a bit different and a bit tastier!

Meatballs:

1 lb. lean ground turkey
3/4 cup oatmeal
1/4 cup of whole wheat seasoned bread crumbs
1 egg
Salt & Pepper for seasoning
1 teaspoon oregano
1 teaspoon basil
1 teaspoon garlic powder
1 jar light alfredo sauce (you can totally make it yourself too, but I was lazy last night)

Smashed Cauliflower:
1 head of cauliflower, washed, diced
1 teaspoon of garlic salt
1/4 Cup of Potato flakes
1/2 Cup of skim milk

Directions:

Preheat oven to 400 degrees. Mix together ground turkey, egg, oatmeal, bread crumbs and spices.

Mix well, go ahead get your hands in their.

Pour a significant amount of the alfredo on the bottom of a casserole dish.

Roll 7 – 8 meatballs and place them in the sauce.

I then took a spoonful of Alfredo sauce and poured it over each meatball.

Chop the cauliflower head into small pieces. I finally figured out how to cut the cauliflower into pieces where it all cooks evenly and nicely. And it’s less messy….I think. Slice it!! Then use your fingers to break it up! It worked real well.

Season the cauliflower with garlic salt, pepper and olive oil in a separate dish. Toss to coat the whole dish.

Place both dishes in the oven (meatballs are covered) and cook for 30 min. I pulled out both dishes and started mashing the cauliflower and kept the meatballs covered in the casserole dish.

I used my small food processor to smash my cauliflower, I usually use a hand blender but I left it at our summer camp and didn’t realize it until this very point in time! So I made do and I’m glad I did. I added half of the potato flakes, topped it with half of the cauliflower and added half of the milk and processed a few times.

I scraped down the sides and processed again, do expect some lumps, it’s better that way!! It tastes like you get mashed potatoes and cauliflower all in one dish! I was impressed with how it came out! The color you see in it is the marks from roasting it! Usually I steam it, I loved the roasting, it gave it way more flavor!!

Then I put a few scoops of the cauliflower on a serving plate, topped it with 2 meatballs, and scooped a little alfredo on top!

If my daughter ate her whole plate than you have to trust me on how good this was because she is soooo picky and doesn’t even like meat!!! I was so proud!! Yes I was that mother clapping like a fool!
