A Healthy Lemon-Pesto Chicken #PamperedChef

Anyone who knows me know that I’m a huge Pampered Chef fan! I own probably half the book so thank god expanding our kitchen is in the 5 year plan! The lat order I placed I ordered a few cookbooks. This one was a cute little recipe book of all recipes for their Deep Covered Baker. It’s really just a casserole dish that is either microwavable or oven safe. For this recipe it just needs to be microwavable safe. Here is how you can prepare this dish in a matter of 30 minutes for an easy yet healthy dish! Make my Kale Pesto ahead of time to save yourself some time, store bought is fine too I just love making my own these days to make it healthier. If you don’t have citrus and basil rub, no biggy! Rub the chicken with lemon and sprinkle with basil!

Ingredients:

1 lemon
2 tbsp of butter, melted
2 tbsp of all-purpose flour
1 cup of 2% of milk
1 garlic clove, pressed
1/2 cup prepared kale pesto
6 boneless, skinless chicken breasts
1 tbsp of citrus and basil rub
2 plum tomatoes

What to do:

Zest the lemon to measure 2 tsp. Combine butter and flour in a bowl; whisk until smooth. Add the lemon zest, milk, and garlic to the butter mixture; whisk well. Add the mixture to a microwave safe dish, cover and cook for 3-4 minutes or until thickened, stirring every 60 seconds. Add the pesto and mix well.

Season chicken with rub. Place the chicken in the safe a large microwave dish, overlap if needed (I used Pampered Chef’s Deep Covered Baker). Pour sauce over the chicken. Microwave covered on high for 12-15 min or until internal temperature reaches 165F in the thickest part of the chicken. Remove from microwave and let stand, covered for 5 min.

Meanwhile cook a pasta or rice of choice, I chose my Parmesan and Basil Orzo. Seed and dice tomatoes. Serve the chicken over the rice or pasta, pour some sauce over the chicken and garnish with tomatoes. Sorry for the bad picture, I only had my phone.
