I have another great Weekday Supper to share with you all today. These Skinny Egg & BLT Wraps are great for an on the go meal too if your running out the door to soccer practice or a music lesson. Roll them up and hop in the car!
I chose to make a spread and let everyone from my family pick and choose their wraps. It works great if some don’t like eggs or in my case bacon (who doesn’t love bacon?!) I found these low carb wraps at the local Fresh Market a few months ago and I’ve been hooked ever since. They are low in calories, carbs and fat, usually that’s not something I’ve found in a wrap.
If your anything like me you like to munch on a french fry or even add some chips to that plate when you have a sandwich or wrap. Well lately I’ve been really trying to make the sandwich/wrap a lot more filling so I don’t “need” that side munch! Well this Skinny Egg & BLT Wrap is just perfect because it will leave you full and satisfied! If you do need that munch cut up some cucumbers and strips of peppers.
- 2 hard boiled eggs, sliced
- 1 large plum tomato, sliced
- 4 pieces of cooked bacon
- 1 cup of lettuce
- ½ cup of spinach
- Wrap of your choice
- Goat Cheese (or cheese of your choice)
- Pesto (optional)
- Arrange all of the ingredients on a large plate.
- Lay out wraps.
- Brush a tbsp of pesto on each wrap.
- Add lettuce, spinach, 1 sliced egg (1 per wrap), 2 pieces of bacon, top with goat cheese.
- Fold in sides and roll.
