Yup you guessed it! It’s a Soup kind of #SundaySupper! I don’t know about you but I could seriously live on Soup! Starting in October I enjoy making fall themed Soups. Winter comes and it’s flu season, this season I’ve never eaten as much soup as I have! When all you want are those fresh veggies and that warm broth on your throat. Spring comes around and you want to do away with the soups and break out the grill, but I’m tempted to try some chilled soups this season! Well we’ve got them all right here! Pam over at the Meltaways. Yup that name sounds familiar because Pam was Featured here for a Featured Friday not so long ago! I am happy to see her hosting this awesome event!
I have so many favorite soups, I make new ones all the time, it’s one “food group” I love experimenting with, I originally got the idea from another website but I’ve been really trying to see outside the internet lately and just go with what I feel is going to taste good, I’m so glad I went with it, because again, I wasn’t disappointed!!
A hearty healthy soup for a cold winters night. Warms up great for leftovers too! Serve with warm bread and it's a meal!
Ingredients
- 2 cloves of garlic, chopped
- 1 1/2 tsp of basil
- 1 tbsp of Herbes De Provence
- 1 tsp of ground pepper
- 1 pkg. of Italian Chicken Sausage (made from the meat department, you need to be able to slice open the casings and remove the sausage) If not you can slice it up into bite size pieces.
- 1 can of Cannelinni Beans
- 1 Onion, diced
- Olive OIl
- 36 oz of chicken broth
- 1 cup of water
- 1 1/2 cups of fresh spinach
- 5 celery Ribs, chopped
- 5 carrots, Chopped
- 1/2 bag of frozen Edamane Beans
Instructions
- Saute carrots and celery with olive oil in a stock pot for 10 minutes.
- Meanwhile remove sausage from casings and add to the pan. Add garlic.
- Saute together until sausage is browned, roughly 10 minutes.
- Add the broth, water, and all the seasonings, cover and simmer for 15 minutes.
- Add the beans, spinach and edamane beans and simmer uncovered for another 10 minutes.
- Serve Piping Hot with bread.
