A friend of mine made these Guacamole Deviled Eggs one year for a St. Patrick’s Day party we hosted. They were creamy, delicious and healthy! I love that there is a little kick to it but knowing their is no mayo in it makes me love these bites of deliciousness even more. Serve them as an appetizer or snack and watch them disappear, or heck do what I did this time and save them all for yourself!
Let’s talk eggs since the theme for this weeks Sunday Supper happens to be any and all things “eggtastic” isn’t that cute. People often confuse eggs as being unhealthy because of the yolk. Eggs are high in cholesterol, but they don’t affect the blood cholesterol. It’s important to keep in mind that cholesterol in the diet doesn’t necessarily raise cholesterol in the blood. HDL stands for High Density Lipoprotein and it’s often known as the “good” cholesterol. We all know that getting enough protein in your diet is very important. Eggs are a great source! 6 grams in one. Also, it’s important for our muscles to have protein after any kind of exercise. I always have a high protein lunch or snack after I workout.
Recipe from: Skinnytaste
- 2-3 tsp fresh lime juice
- 1 tsp red onion, minced
- 1 tbsp minced jalapeno
- 1 tbsp fresh cilantro, chopped
- kosher salt and fresh ground pepper, to taste
- 1 tbsp diced tomato
- 6 large eggs, hard boiled
- 1 medium haas avocado
- Cut six hard boiled eggs length wise and remove the yolks. Set aside.
- In a small bowl mash together the avocado and 4 egg yolk halves (discard the rest).
- Add in the rest of the ingredients accept the diced tomato. Stirring to combine. Gently fold in the tomato.
- Add a heaping tbsp of guacamole to each egg half. Sprinkle a little fresh cilantro on top if desired!
