I got this recipe from someone in a group I belong to on FB. She got it off the show The Chew. Love that show and I’m so obsessed with the Food Network channel I haven’t watched it in a while. They were goooooood, this is what I call a healthier burger! I’m changing the directions because of what I learnt while making these. The original recipe calls for mixing the panko crumbs and parmesan cheese together and coating the burger in that, however I think it would work best to put the cheese in the burger and then coat in the crumb mixture. The cheese burnt on my grill pan and made it hard to flip them. (don’t worry I salvaged them!!!)
Ingredients:
- 1 pound Ground chicken
- 1 tablespoon Olive oil plus for to fry
- 2 tablespoons Tomato sauce
- 2 teaspoons Dried basil
- 1 tablespoon Minced onion
- Kosher salt and freshly ground black pepper
- Red pepper flakes to taste
- 1 cup Panko crumbs
- 1/2 cup Grated parmesan cheese
- 4 Rolls
- Sprinkle of shredded mozzarella cheese
What to do:
Mix chicken, oil, sauce, parmesan cheese and seasonings together.
Form the chicken mixture into balls. The texture is gloppy.
Flatten into burger patties and dip into the panko mixture. Repeat procedure to make four patties.
Put burgers on waxed paper and allow them to set in the refrigerator for about 30 minutes.
Pour a liberal amount of olive oil in a nonstick fry pan. Pan fry burgers until done and crispy. Drain them on a paper towel.
Top burgers with some additional tomato sauce and shredded mozzarella cheese. Broil until cheese melts.
Serve on a crispy round roll.
Or serve it like this…….this is how I had it! I saved myself 220 calories and LOTS of carbs!! I’d rather have the good ol’ fashioned tater tots than the bun!! Hello people priorities!
