Another #WeekdaySupper is upon us friends!! I took part early this month because of course I wanted to be a part of it and because I’m hoping I’ll be tied up with my baby boy come the end of the month!! This dish is one I wanted to share with the world because it’s easy, it’s yummy, it cooks in no time and it’s sure to make everyone happy since they are individualized. It’s easier to stay portion controlled with this recipe too!! I made this recipe one day while craving a meatloaf. My husband isn’t big on meatloaf, so I have to think of creative ways that will keep him interested!! I love bacon, we love bacon I should say, BBQ sauce is a common ingredient to make anything yummy!!
Ingredients
- 1 pd. Ground Beef
- 1 Egg
- 4 pieces of Pre-cooked bacon, diced
- 1 cup of BBQ sauce, seperated
- 1/4 cup of seasoned bread crumbs
- 1 tbsp of Dijon mustard
- 1/4 cup of grated Mexican cheese
- Cooking Spray
Instructions
- Mix the first seven ingredients together reserving 1/2 cup of BBQ sauce for topping. Don't over mix. Get your hands in there and mix though don't be scared!
- Using a muffin tin (I used my new Pampered Chef dish that makes individual servings, you can also use a large muffin tin for a larger serving, the small ones are very small) add the meatloaf mixture three quarters of the way up each tin pressing firmly.
- Bake for 25 min. Add a tbsp. of BBQ sauce on each muffin (feel free to sprinkle some more cheese on top too!) cook for another 5-10 min and serve.

Oh, these sound so good, Tammi – my kids would devour them! I love making individual servings of meatloaf in cupcake tins…so fun. 🙂
